Grain-free banana bread

you can put the batter in a bread pan or make muffins with it! eat it like toast and smother with butter or as mini muffins with a good cup of coffee.

i have literally sat down and eaten 6 banana bliss muffins at once! they were mini muffins of course… but still, i could so win a muffin eating contest (only if the muffins were as good as these)

Banana Bliss Bread (or muffins)

ingredients:

  • 3-4 bananas, very ripe
  • 1/2 cup coconut flour
  • 2 1/2 tbs honey
  • 1/4 cup coconut oil
  • 1/2 tsp baking soda
  • 2 tbs coconut (or other) milk
  • 1 tsp vanilla
  • 3 eggs
  • cinnamon for sprinkling

options:

  • top/add in nuts
  • sprinkle with spices
  • top with honey
  • add in blueberries
  • add in flax meal
  • smother with butter (or ghee)
  • add in chocolate

preheat oven to 400

Mash bananas in a bowl and add in wet ingredients. In a separate bowl, mix together dry ingredients. Add dry ingredients into wet until well incorporated. Put into bread tins mini muffin tins and bake for around 13 minutes or longer, depending on size of baking pan. Top with butter or honey… and enjoy!
