super yummy kale salad!!

SUPER KALE (guest post by Pantry TakeOver)

One of my dearest friends taught me how to make this dish and it immediately became my favorite dish, ever!  I have served this to many people, all different age groups (little kids to elderly) and everyone LOVES it.  My neighbors literally stop by my house to find out if I have any kale salad made, people drop off heads of kale at my house to have me make it for them.  Well here it is, the infamous kale recipe. Make, eat, enjoy.SUPER KALE

One large Head of ORGANIC KALE
wash kale, peel off stems and throw away stems, tear kale into smaller pieces and put into a large bowl, Do not cook Kale, this recipe calls for RAW KALE 🙂

dressing
1/4 cup of first pressed olive oil
2 tbs of Ume plum vinegar (must use this type of vinegar, no substitutes.  Can be found in the Asian section at Whole Foods Market)
1/2 – 1 tsp of agave, honey, or maple syrup
1 tsp of fresh ground ginger
1/4 tsp of soy sauce or gluten free tamari sauce (for soy free, use coconut aminos)
2 large cloves of garlic

mix olive oil, vinegar, soy sauce, agave, ginger and 2 pressed cloves of garlic all together.  blend well, then pour over kale,  massage dressing into kale with your (clean) hands

optional: toss in small amount of goats milk feta cheese right before serving

You can either serve this dish immediately or you can save it for a day in the refrigerator.  The kale will absorb the dressing. Many people prefer this salad a day old.

Kale is packed with vitamins, minerals and antioxidants.  Organic kale is one of the most nutritious foods you can consume!  A good source of  Dietary Fiber, Protein, Thiamin, Riboflavin, Folate, Iron, Magnesium and Phosphorus, and a very good source of Vitamin A, Vitamin C, Vitamin K, Vitamin B6, Calcium, Potassium, Copper and Manganese.
