I cannot express how much I LOVE lentils! They are hearty, enjoyable, and nutritious(plus, they are gaps approved)!! (btw, this recipe made me love lentils even more!) If you haven’t cooked with lentils before, you should know that there definitely is a difference between sprouted and regular lentils. For simple instructions on how to sprout lentils click HERE. Even if you are not a cullinary genius, these burgers are very easy and simple to make, they don’t require much time either! They are a great Gaps approved veggie burger and are very filling. Keep in mind, these are veggie burgers but they are not vegan due to the lard. If you happen to eat vegan, i suggest making replacing the lard with a dairy free margarine or simply double the oil. This a recipe not to forget! 🙂

Veggie lentil burgers:
- 4 cups of sprouted lentils
- 1 teaspoon sea salt
- 1/8 cup of lard & 1/8 cup of oil (coconut oil, avocado, grape seed, ect)
- Oil of choice for pan
Melt a oil of choice on a skillet at a medium heat. In a food processor (or strong blender), combine the sprouted lentils, salt, the 1/8 cup oil, and lard until smooth. Form this “mixture” into patties, and fry in skillet until they are a light golden brown, flipping them so both side cook evenly. Enjoy on a piece of lettuce, bread/bun, ect!!!
